Three menus prepared with a selection of dishes from our menu that draws on the roots of traditional Basque cuisine, updated and with touches of other gastronomic cultures.

MENU DIPUTACIÓN

Mini cones of foie and pistachio mousse with plum jam and chocolate peta zetas and Idiazabal cheese mousse cone, Italian tomato with walnut earth and cider quince jam.

Tuna & Mini Roll: Alakrana tuna tartar, osmotised melon with Aperol, endive, Pyrenean trout roe, soy and red onion air, papaya puree, orange essence, yakisoba mayo and wasabi mayo.

Seasonal vegetables in Asian tempura, white coriander mojo and red picón mojo.

Cod confit in leek and butter miso and citrus mousse panipuri.

Low temperature Iberian cured pork shoulder, apple compote and orange and pepper sauce.

Vietnamese rolls stuffed with lobster salad, coral butter and Pyrenean trout roe.

Crispy fried baby squid tentacles in Korean barbecue with black garlic aioli and spicy sauce.

Alakrana tuna tataki breaded in sesame with green curry vegetable couscous and yakisoba mayo.

Beef cooked for 12 hours in Pomal Crianza wine, with papaya puree and Italian white truffle oil.

Vanilla pumpkin cream from Madagascar with fresh milk ice cream and pumpkin seeds.

Bubba & Roll Mini: classic Maine-style roll: made with prawns, kaffir lime apple, prawn mayo, Panko crisp and orange essence.

Pacific scallops with osmosed melon in Aperol and coriander pesto.

Stuffed and grilled baby squid, piparras vinaigrette, onion chutney and gochujang and black garlic emulsion.

40 days matured simmental cow chop on stone with garnish.

Chocolate soufflé.
